Gluten Free Salted Caramel Popcorn

Are you constantly struggling to find different things to pack in the kids lunch boxes? Me too!!

Popcorn is one of the cheapest, easiest and yummiest snacks to make and this recipe is one you can do in the morning when you’re making the kids breakfast or even the night before (just store it in an airtight container).

The first thing you’ll need is a popcorn maker. Any kind will do, I bought mine from Target but you’ll find them at most retail outlets or online and they don’t need to be anything expensive or fancy.

For the recipe you’ll need:

  • 1/3 cup of Popping Popcorn
  • 40 grams Salted Organic Butter (you can use coconut oil to make it dairy free)
  • 6 grams Raw Honey
  • 1/4 teaspoon rock salt (you can add more if you like it saltier)

 

Place the popping corn into your popcorn maker, switch it on and leave it to do its thing.

While you’re waiting take a small saucepan (I actually use a Briki which is traditionally used to make Greek Coffee but is very handy when making this recipe).

In the saucepan place the butter (or coconut oil if that’s what you’re using), salt and honey and gently mix together until it starts to bubble.

Once the popcorn is done, place it into a glass or stainless steel bowl and whilst the salted caramel mix is still hot pour it all over the popcorn and with a spoon mix it all together until all the popcorn is well coated.

Once it’s done pack some for the kids lunches and place the rest in an airtight container for the next day, that is if there’s any leftover.

Enjoy the standing ovation you receive from the kids and save yourself some cash on school snacks.
